Before I stuffed my face full of food I decided to try a new circuit workout I found in Women's Health. It's called Tone Up Anytime, Anywhere! I modified this workout a little by adding .5 mile fast paced run in between sets...I am still motivated from the Boston Marathon. :) The workout looked like this:
1) .5 (8:15 mile pace)
Note: repeat each circuit for 1 minute and then move to the next
2) Forward Lunges
3) Squat Jumps
4) Push-Ups
5) Burpees
6) Plie Squat
7) Jumping Jacks
8) Rotating T Planks
9) Russian Twists
Take a 2 minute break and do the circuit a total of 2-3 times. I have to be honest that after my first set of Squat Jumps I was really unhappy that my next exercise was Push-Ups...pretty much the two hardest exercises ever for me but my favorite part about this workout is that you don't have to be at the gym or have any equipment. Double Bonus! I can't wait to do this workout again...the magazine says to alternate this workout into your schedule 2-3 times a week for the best results. BTW while I was working out I looked at my iPod and it said 3:30am...I did ask myself what am I doing working out/doing push-ups at 3:30am my time (apparently my iPod didn't change time zones with me. :) I am crazy!
Breakfast included greek yogurt, blueberry flax granola (my favorite granola on the planet) and strawberries paired with a half of a sandwich thin topped with apples and peanut butter. This breakfast hit the spot...yummy in my tummy.

Side Note: Wild Harvest Natural Blueberry Flax Granola is simply amazing. It is a light granola with tons of flavor and pairs perfectly with yogurt. :) Two thumbs up...I think I am going to bring some of this home in my suitcase.
Now it was on...time to conquer all the Food Trucks in Boston okay not all but a few. Kelly was so excited to do this so planned out our route the night before and took notes on all the food trucks and their specialities. This came in so handy because the weather was not perfect. Here's the lowdown all the following Food Trucks are located downtown in the Financial District.
Clovers - Recommended dishes Chickpea Fritter and Rosemary Fries
We decided to order both these items and we weren't disappointed. The rosemary fries were tossed with whole rosemary leaves and sea salt! DELISH. The Chickpea Fritter reminded me of a falafal but less greasy.

Mama Goose - This asian bistro has everything curry of the day's, pho, phad thai, ba minh etc. We decided to each order something from here! :)
So we ordered Massamun Tofu Curry, Thai Peanut Chicken, Wonton Soup and a Ba Minh Sandwich. I have to say that our order took less than 5 minutes and the serving sizes were very generous. Food ranged from $5-$8 for each plate. The highlight for me was Kelly's Ba Minh Sandwich. The pork was flavored perfectly and the spicy mayo sauce was just the kick I needed. The curry and peanut chicken were good for a Food Truck but I don't think I would order it again.
Silk Road BBQ -It was not a traditional BBQ Truck it had a nice variety of Mediterranean, Caribbean and traditional BBQ flavors. I decided to try something new so I ordered a Jerk Chicken Skewer. It was really delish! The meat was tender and the flavors were very bold which I liked. The meat was served in foil without a skewer which made it a lot easier to eat! :)
Man after this all our bellies were full but we were happy! We decided to walk around and do some shopping. The shopping helped us make room for the healthy portions of gelato that were up next. We headed to Faneuil Hall to the gelato stand...they had a two scoop minimum. :) I ordered cocco and blueberry and I have to say they were both equally delish. Just what I needed to end a perfect day in Boston.
Heaping scoops are the only way to go!
You would think that I would be full from the day but think again...I'm on vacation. Dinner's menu included spaghetti squash with turkey meat sauce. I have never had spaghetti squash prepared like this but I really enjoyed it. It was so easy to prepare:
1) Cook spaghetti squash on cookie sheet for 40-60 minutes on 400 degrees (cut in half the long way)
2) Cook ground turkey
3) Add prego sauce, garlic and fresh basil to cooked ground turkey
4) Simmer sauce until squash is tender
5) Use a fork to get all the squash out and you are done!
Thank you Nick for teaching me how to prepare this awesome meal. The squash is so much lighter than pasta noodles...so I added a small piece of garlic bread to my plate. :)
For dessert Kelly got out the deep fryer! Yes...after everything today we still needed some dessert. :) Below see the delicious photos of Nutella Banana Wonton and deep fried snickers!

The Food Truck's were so much fun...I really hope they come to Seattle. They are cheap to so we could totally afford them. :) BTW I have to be fit because I eat like a horse.
